Lemon and coconut energy balls

Ingredients:

10 Medjool dates

100g almond butter

Juice from 2 lemons

Desiccated coconut (to roll in after) 

Method

  1. All ingredients (bar coconut) to a food processor and blitz for approximately one minute.
  2. Roll into balls (roughly a tablespoon of mixture per ball). I managed to get 10 balls from these ingredients.
  3. Roll in the coconut and then store in the fridge. Will keep for up to a week.
