Banana and blueberry pancakes

Serves 2


4 tablespoons of buckwheat flour

2 eggs

1 ripe banana

1 teaspoon of cinnamon

1 tablespoon of coconut oil

handful of blueberries to serve

Maple syrup for serving (optional)


  1. Mash the banana and then add in the eggs, buckwheat flour and cinnamon.
  2. Whisk until all combined.
  3. Heat the oil in a frying pan on a medium heat and then pour in some the mixture (your want approximately 6cm diameter for each pancake).
  4. Fry for 2 minutes each side.
  5. Serve with blueberries and a small drizzle of maple syrup.
  6. You could also include some chopped nuts or banana as an alternative topping.
